Pansit Palabok

Talk about carb overload =) this is a classic Filipino favorite: Pansit Palabok with chicken lumpia pairing.

We were talking about the best palabok in the city the other day and two names come to mind, Lola Inda and Red Ribbon. Since I was craving for it I ordered one from someone who claimed to make good homemade palabok. We were sorely disappointed however since the product came out too red and too salty, it’s not even supposed to be red, it should be yellow. I wonder how much food coloring was put into.

Anyway, to salvage the dish and satisfy our craving, we decided to make our own palabok and it turned out way better than what we ordered. I’m gonna be wary of those ads next time.

shrimp

boiled egg
calamansi
