Bitter Gourd Two Ways

To make it less bitter, soak the vegetables in water and salt for 15-30 minutes then wash in cold water. The two ways of preparing this in our household is pickled with onion, tomatoes, and vinaigrette; the other one is sauteed with onion, tomatoes, garlic, pork, shrimp and egg. Either way it’s a home run.
